COUSCOUS AND VEGGIE SALAD: BEAUTIFUL AND DELICIOUS

When I wrote the original post about this salad, it was with a bit of tongue in cheek because I have always subscribed to the “MORE than enough” menu-planning concept. I would ask Allen, before a party, “Do you think we have enough food?”. He would always nod and just say, politely, “Yes, dear.” But I know in my heart that he was silently rolling his eyes and thinking, “I can’t believe you are asking me this again–we always have enough food!” I don’t ever remember a time when he said, “No, dear, I think you have to make more food.”

This dish (in and of itself) is an example of providing MORE than enough salad in one sitting. You will need friends to help finish it all, unless you like to eat the same thing for a week.

Choose the vegetables that you love, and keep an eye on the beautiful colors you can add. Then you can “eat the rainbow” in one salad. Be sure to try this with whole wheat couscous; I think it really gives the dish more flavor: COUSCOUS SALAD
